Broccoli and Cauliflower Soup – Comfort in a Bowl!

When your stomach needs a little extra love, this creamy, cheesy broccoli and cauliflower soup works wonders. It’s quick, healthy, and absolutely delicious. Plus, you can whip it up with pantry staples—no hassle! Let’s dive in!


Ingredients 🛒

  • 3 cups broccoli florets
  • 3 cups cauliflower florets
  • 1 onion, diced
  • 3 cloves garlic, minced
  • 4 cups vegetable broth
  • 1 cup milk or cream (your choice!)
  • 1 cup shredded cheddar cheese
  • 2 tbsp butter
  • 1 tsp dried thyme
  • Salt & pepper, to taste
  • Optional toppings: extra cheese, croutons, or crispy bacon bits

Directions 👩‍🍳

1️⃣ Sauté the Onion & Garlic:
In a large pot, melt butter over medium heat. Add the diced onion and cook until soft and translucent (about 5 minutes). Toss in the minced garlic and cook for another minute, just until fragrant.

2️⃣ Add the Veggies & Broth:
Stir in the broccoli, cauliflower, and vegetable broth. Bring it to a gentle boil, then reduce the heat to a simmer. Let it cook for 15-20 minutes, or until the vegetables are fork-tender.

3️⃣ Blend Until Smooth:
Carefully transfer the soup to a blender (in batches if necessary) or use an immersion blender to puree it directly in the pot. Blend until silky smooth.

4️⃣ Make It Creamy:
Return the blended soup to the pot (if you used a blender). Stir in the milk or cream and shredded cheddar cheese. Mix until the cheese is melted and fully incorporated.

5️⃣ Season to Taste:
Sprinkle in the thyme, and season with salt and pepper to your liking. Give it a final stir.

6️⃣ Serve & Garnish:
Ladle the soup into bowls and top with your favorite garnishes—tiny broccoli florets, extra shredded cheese, croutons, or crispy bacon bits.
