Cowboy Mushrooms

Ingredients:

  • 1 lb (450g) whole white or brown mushrooms
  • 2 tablespoons olive oil
  • 4 tablespoons unsalted butter
  • 6 garlic cloves, minced
  • 1/4 cup chicken or vegetable broth
  • 1 tablespoon soy sauce
  • 1 teaspoon fresh thyme leaves (or 1/2 teaspoon dried thyme)
  • 1/4 teaspoon black pepper
  • 2 tablespoons fresh parsley, chopped

Instructions:

  1. Clean the Mushrooms:
    • Gently clean the mushrooms with a damp paper towel to remove any dirt. If necessary, rinse briefly and pat dry with paper towels. Make sure they are dry before cooking.
  2. Prepare the Garlic Butter:
    • In a large skillet, heat the olive oil and 2 tablespoons of butter over medium-high heat until the butter is melted and bubbling.
  3. Cook the Mushrooms:
    • Add the mushrooms to the skillet and cook, stirring occasionally, until they are golden brown and have released most of their moisture, about 5-7 minutes.
  4. Add Garlic:
    • Reduce the heat to medium, add the minced garlic, and cook for about 1-2 minutes, until fragrant and lightly golden.
  5. Make the Sauce:
    • Pour in the chicken or vegetable broth and soy sauce. Stir in the thyme and black pepper. Simmer for 2-3 minutes until the sauce reduces slightly.
  6. Finish with Butter:
    • Stir in the remaining 2 tablespoons of butter until melted and the mushrooms are well coated in the garlic butter sauce.
  7. Garnish and Serve:
    • Sprinkle the chopped parsley over the mushrooms, stir to combine, and serve immediately.

Tips:

  • For a richer flavor, you can use a mix of different types of mushrooms.
  • Adjust the amount of garlic according to your taste preference.
  • Serve these garlic butter mushrooms as a side dish with steak, chicken, or fish, or use them as a topping for toast or pasta.
