Step 1: Prepare the Crust
- In a bowl, combine the graham cracker crumbs, granulated sugar, and melted butter until well combined.
- Press the mixture firmly into the bottom of each sugar cone to form the crust.
- Place the cones on a baking sheet lined with parchment paper and set aside.
Step 2: Make the Cheesecake Filling
- In a mixing bowl, beat the softened cream cheese, granulated sugar, and vanilla extract until smooth and creamy.
- Spoon the cheesecake filling into each prepared sugar cone, filling them about three-quarters full.
- Smooth the tops of the cheesecake filling with a spatula or the back of a spoon.
Step 3: Add the Peach Cobbler Topping
- Spoon a generous dollop of canned peach pie filling on top of each cheesecake-filled cone.
- Gently spread the peach filling to cover the surface of the cheesecake filling.
