- 1 package (14 oz) refrigerated pie crusts (2 crusts)
- 4 large eggs
- 1/2 cup milk
- 1/2 cup shredded cheese (such as cheddar, Swiss, or mozzarella)
- 1/4 cup diced cooked bacon, ham, or sausage (optional)
- 1/4 cup diced vegetables (such as bell peppers, onions, spinach, or mushrooms)

Step 1: Prepare the Crust
- Preheat your oven to 375°F (190°C). Lightly grease a mini muffin tin with cooking spray.
- Roll out the refrigerated pie crusts on a lightly floured surface. Using a round cookie cutter or drinking glass, cut out circles slightly larger than the size of the muffin tin cups.
- Press each dough circle into the muffin tin cups, shaping them to fit snugly. Trim any excess dough around the edges.
Step 2: Prepare the Filling
- In a mixing bowl, whisk together the eggs and milk until well combined. Season with salt and pepper to taste.
- Stir in the shredded cheese, diced cooked meat (if using), and diced vegetables until evenly distributed.
Step 3: Assemble and Bake
- Spoon the egg mixture evenly into each prepared mini pie crust, filling each cup about three-quarters full.
- Place the mini quiche muffin tin in the preheated oven and bake for 18-20 minutes, or until the quiches are puffed up and golden brown on top.
- Remove the mini quiches from the oven and let them cool in the muffin tin for a few minutes before carefully transferring them to a wire rack to cool completely.
