CREAMED CHIPPED BEEF ON TOAST IS A FORGOTTEN CLASSIC

Instructions

Step 1: Prepare the Cream Sauce

  1. In a skillet or saucepan, melt the butter over medium heat.
  2. Once the butter is melted, add the flour and whisk continuously to form a smooth paste, known as a roux.
  3. Cook the roux for 1-2 minutes, stirring constantly, to remove the raw flour taste.
  4. Slowly pour in the milk while whisking continuously to prevent lumps from forming.
  5. Continue cooking the sauce until it thickens and reaches a creamy consistency, about 5-7 minutes.

Step 2: Add the Dried Beef

  1. While the sauce is cooking, rinse the dried beef slices under cold water to remove excess salt.
  2. Pat the beef slices dry with paper towels, then thinly slice or chop them into bite-sized pieces.
  3. Add the sliced dried beef to the creamy sauce, stirring gently to combine.
  4. Season the mixture with salt and pepper to taste, adjusting the seasoning as needed.

Step 3: Serve Over Toast

  1. Toast slices of bread until golden brown and crispy.
  2. Place the toasted bread on serving plates or a platter.
  3. Spoon the creamy chipped beef mixture over the toast, ensuring each slice is generously coated.
  4. Garnish with freshly ground black pepper or chopped parsley, if desired.
