Easy Stuffed Pepper Casserole

  1. Preheat your oven to 350°F (175°C).
  2. In a large skillet, cook the ground beef over medium heat until browned. Drain excess fat.
  3. Add diced onions, red bell pepper, green bell pepper, and minced garlic to the skillet. Cook until vegetables are tender.
  4. Stir in the cooked rice, diced tomatoes, tomato sauce, Italian seasoning, salt, and pepper. Mix well.
  5. Transfer the mixture into a greased 9×13 inch baking dish.
  6. Sprinkle shredded mozzarella cheese evenly over the top.
  7. Cover the baking dish with aluminum foil and bake in the preheated oven for 25 minutes.
  8. Remove the foil and bake for an additional 10 minutes, or until the cheese is melted and bubbly.
  9. Serve hot and enjoy your Easy Stuffed Pepper Casserole!
