Moroccan Chicken Gyros

Instructions:

  1. In a bowl, combine the minced garlic, ground cumin, paprika, turmeric, cinnamon, coriander, ginger, cayenne pepper, salt, pepper, olive oil, and lemon juice. Mix well to form a marinade.
  2. Add the thinly sliced chicken breasts to the marinade and toss until the chicken is evenly coated. Cover the bowl and marinate in the refrigerator for at least 30 minutes, or ideally, overnight for maximum flavor.
  3. While the chicken is marinating, prepare the yogurt sauce. In a separate bowl, mix together the Greek yogurt, lemon juice, chopped mint, chopped cilantro, salt, and pepper. Stir until well combined. Cover and refrigerate until ready to use.
  4. Once the chicken has finished marinating, heat a grill pan or skillet over medium-high heat. Cook the chicken slices for 4-5 minutes on each side, or until fully cooked through and slightly charred. Remove from heat and let rest for a few minutes.
  5. Warm the pita bread or flatbreads according to package instructions.
  6. To assemble the gyros, spread a generous amount of the yogurt sauce on each warmed pita bread or flatbread. Top with slices of cooked Moroccan spiced chicken, sliced cucumbers, sliced tomatoes, sliced red onions, and chopped fresh parsley.
  7. Roll up the gyros tightly and serve immediately.
