Shrimp Loaded Sweet Potato

A. Preparing the sweet potatoes

  1. Preheat your oven to 400°F (200°C).
  2. Wash and scrub the sweet potatoes thoroughly to remove any dirt or debris.
  3. Pierce the sweet potatoes all over with a fork to allow steam to escape during roasting.
  4. Place the sweet potatoes on a baking sheet lined with parchment paper and drizzle them with olive oil. Season with salt and pepper to taste.

B. Roasting the sweet potatoes

  1. Roast the sweet potatoes in the preheated oven for 45-60 minutes, or until they are tender and easily pierced with a fork.
  2. Once cooked, remove the sweet potatoes from the oven and let them cool slightly before handling.

C. Cooking the shrimp

  1. While the sweet potatoes are roasting, prepare the shrimp. Heat olive oil in a skillet over medium heat.
  2. Add minced garlic to the skillet and sauté until fragrant, about 1 minute.
  3. Add the shrimp to the skillet and season with paprika, salt, and pepper.
  4. Cook the shrimp until they are pink and opaque, about 2-3 minutes per side. Be careful not to overcook them, as they can become tough and rubbery.
