Stuffed Pepper Soup

  • 1 pound ground beef
  • 2 cups cooked rice
  • 2 bell peppers, halved and seeded
  • Shredded cheese for topping
  • Fresh parsley for garnish (optional)

2. Prep Work

Before starting, ensure all your ingredients are prepared and ready to go. Chop the onions, garlic, and bell peppers. Cook the rice according to package instructions if you haven’t already done so.

3. Cooking the Base

Heat olive oil in a large pot over medium heat. Add the diced onion and cook until softened, about 5 minutes. Stir in the minced garlic and cook for an additional minute until fragrant.

4. Browning the Beef

Push the onions and garlic to the side of the pot and add the ground beef. Cook, breaking it apart with a spoon, until browned and no longer pink.

5. Adding the Veggies

Once the beef is browned, add the diced bell peppers to the pot. Cook for another 3-4 minutes until the peppers start to soften.
