Step 1: Prepare the Salmon Mixture

  1. In a large bowl, combine the flaked salmon, chopped onion, chopped bell pepper, and beaten eggs.
  2. Mix well until all ingredients are evenly distributed.

Step 2: Add the Dry Ingredients

  1. In a separate bowl, combine the cornmeal, flour, baking powder, salt, and black pepper.
  2. Gradually add the dry ingredients to the salmon mixture, stirring until everything is well incorporated.

Step 3: Form the Patties

  1. Heat vegetable oil in a large skillet over medium heat.
  2. While the oil is heating, shape the salmon mixture into patties, about 1/4 cup each.
  3. Gently flatten each patty with your hands to form a disc shape.

Step 4: Fry the Patties

  1. Carefully place the patties in the hot oil, making sure not to overcrowd the skillet.
  2. Fry the patties for 3-4 minutes on each side, or until golden brown and crispy.
  3. Use a spatula to carefully flip the patties halfway through cooking.
